I think the crock pot is one of the world’s greatest inventions. Since the late 1960s, American families have enjoyed this amazing kitchen gadget. I love the crock pot for many reasons.
- It is super easy. I love the fact that I can prepare tomorrows dinner tonight and toss it in. The hardest part is remembering to turn it on before you leave the house.
- It is convienient. You set it up in the morning, come home from work, and eat.
- It helps save money! The crock pot is wonderful because it can be used to make delicious meals for pennies on the dollar. It can make even the cheapest cut of meat moist and tender. It is also a great way to use produce before it goes bad.
You are probably wonder why I am writing about a crock pot. I haven’t used ours in a few months before today. It seems that once you put it in the cabinet, you forget about it unless you see it. Out of sight, out of mind. It crossed my mind on Saturday when my friend Liz and I were at Albertson’s picking up a few sales. Now, I don’t shop at Albertson’s all that much because there is not one in my neighborhood, but I will drive the distance if there is a good sale, and there was.
Albertson’s had Country Style Bone-In Ribs buy one get two free! This sale made the ribs only $1.33/pound, which is well under my rule of never spending more than $2.oo/pound for meat. I was so excited because these ribs are used in my favorite crock pot recipe.
Honey Ribs and Rice
- ~2 lb. country ribs (bone in or out)
- 1 can (10.5oz) condensed beef consomme (I use 2 beef bouillon cubes with 10oz water)
- 1/2 cup water
- 2 tablespoons maple syrup (any pancake syrup will work)
- 2 tablespoons honey
- 3 tablespoons soy sauce
- 2 tablespoons barbecue sauce
- 1/2 teaspoon dry mustard (I use honey Dijon mustard if out of dry mustard)
- Rice
Combine everything except the rice in the crock pot. Cover and cook on Low for 8 to 10 hours (or High for 4 to 5 hours). Cook rice separately. Serve ribs over rice with remaining sauce.
